Bakery Replaces Soy With Fava Beans
The medium-sized bakery Gildens has removed soy from its bread production due to its lack of regionality. The bakery is replacing it with fava beans, which are sourced regionally. Bread sommelier Luis Brotsommelier noted that fava beans provide high protein and low fat.
